Who sees beluga lentils, immediately thinks of the caviar of the same name? Not that far fetched. The small, black lentils are actually named after the delicious roe. They are among the finest types of lentils and have a nice nutty taste. The great thing about lenses: They keep their firm consistency even after cooking. And they don't have to lose their color either.
But how can beluga lentils be combined with our smoked salmon??
Very easily: With a fresh beluga lentil salad and our stremel salmon. These are the few ingredients for the spring salad.

Preparation of the beluga lentil salad
First wash the beluga lentils in a sieve. Then bring water to a boil, add some salt and the beluga lentils approx 25 Cook al dente for minutes. Then drain the beluga lentils and let them cool.
Wash the vegetables. Core the peppers and cut into bite-sized pieces. Cut the cucumber and red onion into small cubes. Mix the vegetables and beluga lentils together in a large bowl.
Take the stremel out of the packaging and pluck it into small pieces.
For the dressing: mix some olive oil with the fresh juice of the lemon and a teaspoon of mustard. Season with salt and pepper. Add some dill.
Mix the dressing with the salad. Finally, carefully fold in the salmon and dill and garnish with a lemon wedge.
The beluga lentil salad with stremel salmon is ready. A glass of dry Riesling goes perfectly with this – enjoy your meal.
