What is BioMare?
Many customers, who like to shop in organic supermarkets, gave us the feedback, that they miss our products in the refrigerated counter.
Therefore, we have used our many years of expertise in the organic sector and 2009 developed the BioMare brand, to meet the needs of our customers. You can now find us with our BioMare brand in organic supermarkets all over Germany.
You cannot find our BioMare products? Then ask the store manager – our BioMare products can certainly be obtained from the wholesaler.

What does BioMare stand for?
BioMare stands for products, that come from sustainable fisheries or aquaculture and the high BioMare-Standards are equivalent to.
We attach great importance to the quality and origin of our fish products and obtain them exclusively from certified suppliers, die strict Environment- and social standards retain. With BioMare we make sure, that fish stocks are not overfished and that fisheries- and Aquaculture methods the environment- and meet animal welfare requirements.
Our BioMare salmon comes from controlled organic cultivation and is raised without antibiotics and chemical additives. The salmon grows in cold Norwegian waters, where he finds ideal living conditions.
Thanks to special species-specific breeding methods and natural nutrition, the BioMare salmon is not only of high quality, but also very healthy. Salmon is rich in omega-3 fatty acids, which play an important role in heart health. In addition, salmon contains many important vitamins and minerals such as vitamin D and selenium.

A look behind the scenes
At Wechsler, we bet differently than what is now customary, industrial fumigation in our production on craft as before 100 years.
With us, each fish is traditionally and gently salted by hand before the smoking process and then whole, and not as a finished fillet, smoked. This is how the unmistakable light smoky note and the soft and juicy consistency are created, who takes care of it, that the fish melts in your mouth. After smoking, the fish are carefully filleted by hand.
Smoking in the Altona oven
The good smoky flavor comes from the phenols in the smoke. These have to be generated permanently by burning wood and then flow past the fish once. In modern smokehouses, the smoke is generated externally and then repeatedly pumped around. This gives a nice color but not as much flavor.
That's why we at Wechsler rely on the Altonaer oven and still smoke with it in the classic way 100 years.

We use certified sour cream for our BioMare spread with smoked salmon. Mixed with a delicious herbal mixture, this is then refined with fine pieces of our smoked organic salmon. Like all our organic specialties, our spread is Naturland certified.

In the year 1960 we started as a small eel smokehouse in Cologne. At that time there were two traditional Altona ovens in our smokehouse. Our range at that time consisted of smoked ones, Whole eels and smoked eel pieces.
