Wechsler Nr.1 is premium smoked fish of the best quality. With this brand we offer you our widest range of fish products. In addition to smoked salmon, trout- and shrimp products, we also offer you a selection of delicious sauces and our very tasty smoked eel fillets.

A look behind the scenes
At Wechsler, we bet differently than what is now customary, industrial fumigation in our production on craft as before 100 years.
With us, each fish is traditionally and gently salted by hand before the smoking process and then whole, and not as a finished fillet, smoked. This is how the unmistakable light smoky note and the soft and juicy consistency are created, who takes care of it, that the fish melts in your mouth. After smoking, the fish are carefully filleted by hand.

Smoking in the Altona oven
The good smoky flavor comes from the phenols in the smoke. These have to be generated permanently by burning wood and then flow past the fish once. In modern smokehouses, the smoke is generated externally and then repeatedly pumped around. This gives a nice color but not as much flavor.
That's why we at Wechsler rely on the Altonaer oven and still smoke with it in the classic way 100 years.

In the year 1960 we started as a small eel smokehouse in Cologne. At that time there were two traditional Altona ovens in our smokehouse. Our range at that time consisted of smoked ones, Whole eels and smoked eel pieces.
Wechsler No.1 shrimp and trout
Wechsler No.1 smoked prawns and trout are exquisite delicacies, which are characterized by classic smoking and a very high quality of the starting products.
Smoked shrimp are large ones, juicy shrimp, which have undergone a special fumigation. This process gives them an intense smoky flavor and a delicate texture. We recommend smoked prawns as a delicious addition to salads, Pasta dishes or as a starter.

Wechsler No.1 Premium Eel:
The eel is a tradition with us – at least we have 1960 with the eel, which we smoke over an open beech wood fire to this day, begun.
We only use European eel, either wild-caught or aquaculture. Only the European eel offers the best results when smoked. All other varieties have less taste due to the low fat content and become dry and hard very quickly. The fresh eels are smoked at 80-100° Celsius during the smoking process “burned up”. This allows their full aroma to unfold, while at the same time excess fat is lost. This method gives the eels their intense taste, the soft pink color and the firm consistency.
To protect European eel stocks, do we have 2009 die „Initiative to promote the European eel” (IFEA) together with fishermen, traders and other eel processors.
