What does Wechsler Bio stand for??

Where in the EU organic aquaculture for example 25 kg trout per square meter are allowed, are only in Naturland aquaculture 20 kg/m2. Naturland also regulates the use of antibiotics and conventional medicines much more strictly and in some cases prohibits them.
Naturland farmers and processors work to the highest ecological standards. They produce high-quality food without genetic engineering – to protect the environment and consumers. In addition, Naturland was the first provider for certification.
In the meantime, Naturland has over 53.000 Members of one of the largest organic farming associations. As a future-oriented association, Naturland believes that ecological competence and social responsibility go hand in hand.
We have been crossing with Naturland since 20 years to a reliable partner, to the – just like us – species-appropriate and sustainable animal husbandry and the ecological balance are important to us.

Naturland Salmon

Naturland is an independent organization, committed to organic farming and sustainable aquaculture. Naturland salmon is farmed in aquacultures, that meet strict ecological and social standards. The fish are kept in near-natural ponds or cages and receive a balanced diet, which is free of synthetic additives. Naturland salmon is farmed without the use of antibiotics or chemical medicines, making it a healthy and environmentally friendly alternative to conventionally farmed salmon.

In the rough Atlantic, far off the west coast of Ireland, the incomparable Irish organic salmon grows under the supervision of marine biologists. permanent Fighting against the Atlantic current and high-quality organic feed ensure this, that the fish tender, has almost fat-free meat. We only use organic salmon certified by NATURLAND - according to recognized ecological guidelines, without the use of hormones, medication, Gen- or biotechnology. The same high quality standards also apply to processing in our smokehouse, which is also subject to the guidelines and controls of Naturland. The fish is carefully filleted, salted by hand and 12 Hours traditionally refined over fine beech wood smoke.

Bio Gravel Salmon

We still put a lot of manual work and time into our Gravad salmon. Gravad means in Scandinavian space "buried" Originally, this salmon was marinated with salt, Honey and dill weighed down with stones and buried in cool earth. Due to the high pressure, water escaped from the salmon and the marinade was able to soak in. This process gave it its delicate aroma. We have retained the principle but adapted it to the present day. Enjoy Enjoy our delicacy with a baguette and our mustard-dill sauce Salmon.

A look behind the scenes

At Wechsler, we bet differently than what is now customary, industrial fumigation in our production on craft as before 100 years.

With us, each fish is traditionally and gently salted by hand before the smoking process and then whole, and not as a finished fillet, smoked. This is how the unmistakable light smoky note and the soft and juicy consistency are created, who takes care of it, that the fish melts in your mouth. After smoking, the fish are carefully filleted by hand.

We use certified sour cream for our organic spread with smoked salmon. Mixed with a delicious herbal mixture, this is then refined with fine pieces of our smoked organic salmon.

Like all our organic specialties, our spread is Naturland certified.

Tradition, that you taste.

In the year 1960 we started as a small eel smokehouse in Cologne. At that time there were two traditional Altona ovens in our smokehouse. Our range at that time consisted of smoked ones, Whole eels and smoked eel pieces.

The shrimp and trout are farmed in ecologically controlled aquaculture and receive a balanced diet, which is free of synthetic additives and genetic engineering. The use of antibiotics and chemical drugs is avoided, to ensure healthy and environmentally friendly production. Naturland shrimp and trout come from near-natural waters or are kept in closed systems, that ensure high water quality.

Thanks to this organic farming, Naturland shrimp and trout can be considered an environmentally friendly and healthy alternative to conventionally farmed fish.

Organic prawns natural

Our organic shrimp are farmed under the strict guidelines of the Naturland Association, which go far beyond the level of the European organic seal. According to an old family tradition, the organic herb prawns are smoked in a stone oven over an open beech wood fire, giving them their incomparable taste. Our insider tip: Cook tagliatelle according to package directions, put back into the pot and fold in our herb shrimp. Finally with a shot Refine with olive oil and grated Parmesan and enjoy.

We round off our Naturland range with smoked trout fillets.

Bio Forellenfilets

Our stone oven organic trout grow in natural waters in Germany and Greece. They are raised and refined according to the strict guidelines of the organic association Naturland. That means: They are only kept in numbers adapted to the location, in ponds, where the fish mainly find natural food. The trout are smoked whole and over a long period of time with low salt concentration salted, before being carefully filleted by hand. Only whole fillets are packed. Due to the fresh delivery, the end consumer receives firm fillets with a subtle smoked taste.
