We only smoke whole trout with firm muscle meat in a traditional stone oven over an open beech wood fire. At a temperature of 80 bis 100 They are gently smoked so that the sensitive vital substances are preserved. After smoking, each fish is individually and carefully filleted by hand. Only whole fillets come in a pack.
