We still put a lot of manual work and time into our Gravad salmon. Gravad means in Scandinavian space “buried”.
Originally, this salmon was marinated with salt, Honey and dill weighed down with stones and buried in cool earth. Due to the high pressure, water escaped from the salmon and the marinade was able to soak in. This process gave it its delicate aroma.
We have retained the principle but adapted it to the present day. The best way to enjoy our delicacy is with a baguette and our mustard-dill sauce for salmon.
