What is BioMare?

Many customers, who like to shop in organic supermarkets, gave us the feedback, that they miss our products in the refrigerated counter.

Therefore, we have used our many years of expertise in the organic sector and 2009 developed the BioMare brand, to meet the needs of our customers. You can now find us with our BioMare brand in organic supermarkets all over Germany.

You cannot find our BioMare products? Then ask the store manager – our BioMare products can certainly be obtained from the wholesaler.

What does BioMare stand for?

BioMare stands for products, that come from sustainable fisheries or aquaculture and the high BioMare-Standards are equivalent to.

We attach great importance to the quality and origin of our fish products and obtain them exclusively from certified suppliers, die strict Environment- and social standards retain. With BioMare we make sure, that fish stocks are not overfished and that fisheries- and Aquaculture methods the environment- and meet animal welfare requirements.

BioMare salmon

Our BioMare salmon comes from controlled organic cultivation and is raised without antibiotics and chemical additives. The salmon grows in cold Norwegian waters, where he finds ideal living conditions.

Thanks to special species-specific breeding methods and natural nutrition, the BioMare salmon is not only of high quality, but also very healthy. Salmon is rich in omega-3 fatty acids, which play an important role in heart health. In addition, salmon contains many important vitamins and minerals such as vitamin D and selenium.

Our BioMare organic salmon grows in an ecological aquaculture off the Atlantic coast. Constantly fighting against the Atlantic current and high-quality organic feed ensure this, that the fish is tender, has almost fat-free meat. Only organic salmon certified by Naturland is used - without the use of hormones, medication, Gen- or biotechnology. The same high quality standards also apply to processing in our own smokehouse, which is also subject to Naturland guidelines and certification. The fish is carefully filleted, salted by hand and 12 Hours traditionally refined over fine beech wood smoke.

Sockeye Alaska Wildlachs

As for a bio- or Naturland certification are always subject to controls, BioMare Sockeye Alaska Wild Salmon does not have any of these certifications. However, since we only process MSC-certified goods, we still sell it under our organic brand to organic retailers. The MSC (Marine Stewardship Council) is committed to responsible fishing and monitors catches to ensure the survival of wild salmon. Due to its deep red color, the Sockeye Alaska wild salmon is also called sockeye salmon, it gets this color from small crabs, that belong to its natural food. He spends a lot of time in the open ocean to train his muscular flesh. It is rich in valuable omega-3 fatty acids and has a lower fat content than its aquaculture counterparts.

Bio Dill Dill Salmon

We still spend a lot of manual work and time on our BioMare Gravad Dill Salmon. Gravad means in Scandinavian space "buried". Originally, this salmon was marinated with salt, Honey and dill weighed down with stones and buried in cool earth. Due to the high pressure, water escaped from the salmon and the marinade was able to soak in. This process gave it its delicate aroma. We have retained this principle and adapted it to the present day. The BioMare Gravad Dill Salmon is salted by hand and gently pickled over a long period of time. The taste of the salmon slices is rounded off by the fine herb mixture with dill.

A look behind the scenes

At Wechsler, we bet differently than what is now customary, industrial fumigation in our production on craft as before 100 years.

With us, each fish is traditionally and gently salted by hand before the smoking process and then whole, and not as a finished fillet, smoked. This is how the unmistakable light smoky note and the soft and juicy consistency are created, who takes care of it, that the fish melts in your mouth. After smoking, the fish are carefully filleted by hand.

Smoking in the Altona oven

The good smoky flavor comes from the phenols in the smoke. These have to be generated permanently by burning wood and then flow past the fish once. In modern smokehouses, the smoke is generated externally and then repeatedly pumped around. This gives a nice color but not as much flavor.
That's why we at Wechsler rely on the Altonaer oven and still smoke with it in the classic way 100 years.

We round off our BioMare range with the smoked trout fillets.

Bio Forellenfilets

The stone oven organic trout grow in natural waters. They are raised and refined according to Naturland's strict guidelines. That means: They are only kept in numbers adapted to the location, in ponds, in which the fish are mainly natural find food. The trout are smoked whole and salted with a low salt concentration over a long period of time, before being carefully filleted by hand. Only whole fillets are packed. Due to the fresh delivery, the end consumer receives firm fillets with a subtle smoked taste.
